Pineapple chunks steeped in rum; coconut cupcakes and a coconut meringue buttercream form the essential components to a kickass piña colada (cupcake).
The buttercream used is a meringue buttercream and whilst it is relatively stable, sometimes the humidity here gets the upperhand. It is strongly advised to refrigerate or keep them in an air-conditioned room at all times. Allow the cupcakes to come to room temperature, 15 minutes before consumption, for best results.
These homemade happy food do not contain preservatives and keep well for a week when stored covered in the fridge.
